3 Things I Will Never Buy From the Store Again

There's many foods that taste better when made from scratch in your kitchen. Like; pudding, bread, syrup, even ice cream. But it's way more convenient to just buy them already made from your local grocery store. But there are three things that I will never, ever (I think) buy from the grocery store again!

1.) TORTILLAS
I have wanted to try making homemade tortillas for some time. I've read about several people making their own tortillas from scratch, but it sounded like so much work and so much time. I've read recipe after recipe online for ways to make your own tortillas and finally landed on one I wanted to try. Now the creator of this recipe claims these to be healthy and I don't doubt her for a second. She used organic, unbleached flour. I don't buy organic, so I use all-purpose flour and they turn out perfectly wonderful every. Single. Time. I suppose you could even substitute some wheat flour or almond flour if that's more to your liking. And let me add that my kids cannot get enough of these!


Riggs Family Secret: We love to eat them on Taco Night. We load them up with grilled chicken, grilled veggies and fresh guacamole. This particular recipe makes 12 tortillas and our little family of four can easily devour all 12. We usually eat 1-2 as a taco and then with the leftover tortillas, we spread a little butter on them and cover them in honey. We call it our dessert for the night and it is to die for!

2. PIZZA DOUGH
Now there was a time in my life where I considered myself a pizza connoisseur. I mean, I could have eaten pizza for breakfast, lunch and dinner. Who am I kidding, I still could. I LOVE pizza! Thin crust, thick crust, deep dish, baked, grilled, fire grilled...I love it all! I love homemade pizza too and usually settle on a pre-made crust such as, Boboli, or a raw pizza dough rolled up in a tube from the cold section, like Pillsbury. I don't have anything against these pizza doughs, but I no longer have any desire to buy them again. Many of you know my, ridiculous, fear of yeast. My mom, both of my grandmas, even my sister have worked wonders with yeast. But I seem to oppose yeast. I mean, the stuff does not agree with me. So when I found a homemade pizza dough recipe that had yeast in it, I was a bit timid. I went for it anyway and oh am I so glad I did. The recipe I found is called Honey Pizza Dough. The name is what caught my attention. It's so easy to make. I don't think you can mess it up (at least I haven't yet). And it only takes minutes to make.

I don't know what I've done with my pictures of our homemade pizza, which means it's probably somewhere on my phone. Just trust me on this one; it's the best pizza dough I've ever had!

Riggs Family Secret: We have baked these in the oven and grilled them outside. Both ways are amazing. We did discover that they bake better on a metal baking sheet as opposed to my baking stones. One of the fun things about this recipe is that you can tweak the spices. Depending on what mood you're in, you could substitute any of your favorite spices for the onion powder and garlic salt. Also, we love to drizzle honey on the crusts after we've eaten the pizza.




3. GRANOLA
Granola is another food we've been wanting to make for some time, but hadn't gotten around to it. When we were in Kansas a week ago, my mom had a granola recipe and all of the ingredients to make it. It was so yummy, we made another batch the minute we got home to Illinois. There are many, many, many recipes online for homemade granola. The best part of homemade granola is trying your favorite ingredients in it. I personally love dried cranberries and toasted almonds in my granola. Jason can't live without dried bananas in granola. Every time we've made it, we've tried something a little different. I love coconut and would love to add some toasted coconut some time (Jason's not a coconut fan, so I'll have to add it to only half the batch).


Riggs Family Secret: I love granola with yogurt mixed in, but this stuff is good enough to eat by itself. In fact, Jason likes to keep a Ziploc full in his flight bag for he and the crew to munch on during flights. It's a perfect snack to carry in your purse for a ball game or at the movies too! Dakota loves it, but Jaxon can't get past the way it looks and therefore won't try it, yet. The recipe I put below is only one of many found online. We don't follow it word for word, but you get the idea. We actually heat the oil and honey in the microwave for about 30 seconds so it stirs together a little easier. We also add a dash of salt. And we don't like to add any dried fruit until the granola is done cooking. The cranberries were a little too baked (aka: chewy) for our liking.

Yesss! I have been WAITING (patiently, right?) for the homemade tortilla recipe. :) I always love hearing about the delicious creations you make. So proud of you for showing yeast who's boss. Now can you please teach me how to show chocolate chip cookies who's boss?
