Donuts Craving

Jason has been saying for months (probably since we moved down here 12 months ago) that he wants a cake donut with white icing and sprinkles. There are not a lot of donut shops down here and the ones we have found make raised donuts with icing (he does not like raised donuts). Finally a donut chain opened in Columbus; Dunkin' Donuts and we were so excited. Sorry to hurt the feelings of DD fans, but we discovered that we don't like their donuts. They are raised not cake and they don't taste fresh or homemade to us at all. I kept thinking I would get him some donuts the last few times I was home in KS, but it's never worked out. One night his craving got the best of him and he decided to google it. Sure enough, several recipes popped up and thus the Riggs Pastry Shop was born.

Here is one of the donuts he made. He made the dough, rolled it out, shaped it and fried it in veggie oil and crisco. I was the decorator. I wasn't sure what kind of icing to make, so I decided on a thicker version of the icing I make for a cinnamon roll recipe I have. The texture was a little thinner than what we're used to but the taste was exactly like what we get back home. This picture doesn't even do it justice. These babies were amazing and we got to eat them while they were warm!

Jaxon is inspecting his donut hole and not sure if he should trust us.

Looks like he is glad he listened to us about trying it. Mmm sugar!

Making sure he gets ALL of it in his mouth.

The result: Jaxon is as big a fan of cake donuts with white icing and sprinkles as his daddy!
